1 cup soy milk, 1 tsp apple cider vinegar, 1 cup whole-wheat flour (or 1/2 cup buckwheat flour with 1/2 cup almond meal for a gf option). 1/2 cup Giant Sports Delicious Protein Vanilla Flavor. 2tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt, 1 tsp cinnamon, 1 tsp vanilla extract, 1/3 cup light extra virgin olive oil, 1/3 cup of sugar, 1 1/2 cups blueberries.
Bake at 190 degrees centigrade for 22-25 minutes.
